Using a strainer, transfer noodles to a colander set in a bowl of ice water. Remove colander, and rinse noodles under cold running water.

Add too much flour now, and the extra flour needed to roll out the noodles will lead to a dry rather than tender noodle. Attach the spaghetti plate to the pasta presser, and securely attach the pasta presser to the KitchenAid stand mixer. Fold one end over the center, then the other, making a stack of three layers of dough. Repeat at least three times to add chewy texture. Repeat this technique if your pasta tears.
